Christine entered the management ranks of the restaurant industry in 1974, as Partner/Operator of the highly successful Le Biarritz French Restaurant located in Newport Beach. Beginning as a small café, the restaurant grew into a three story thriving operation, recipient of the Gold Medal Award from the Restaurant Writers of Southern California.

In 1987 the Partners divested themselves of the restaurant, and Christine opened Le Biarritz Catering. With her vast and varied experiences, Christine is thoroughly conversant on all aspects of the restaurant and catering industries, as well as menu planning, decorating and floral arrangements.

Carlos has been with Pacific Whey for more than Ten years and has evolved into one of the finest bakers in the industry. Carlos maintains responsibility for Pacific Whey's spectacular bakery offerings.

In 1982, Marc founded Wilsey Financial Consultants, Inc., a computerized bookkeeping timeshare service targeted at high-end restaurants. Clients included The Ritz Restaurant, Le Biarritz Restaurant and The Bouzy Rouge Café. During that same period Marc also was a founding member of Atlas Technology, Inc., a software development company targeting the Telecommunications industry. In 1984 Atlas Technology, Inc. landed a Master Development Agreement with Pacific Bell, and subsequently became the sole provider of Special Services software applications and maintenance to Pacific Bell for nearly seven years, with over forty copyrighted applications. He then served as General Manager, Vice President and CFO of other high growth companies. Marc has had extensive success identifying and building prototypical business models and then replicating those models for maximum gain.

In 2002, Marc became a full time Partner in Pacific Whey. Since then, he has used his broad based business management expertise to bring Pacific Whey Café to its current level of success.

Cheryl has effectively been in the restaurant industry her entire life, with her family opening their first restaurant when she was 5 years old. Although Cheryl is fully conversant with every aspect of the industry, her fortes are operational and financial controls.

Cheryl's record of accomplishment in the food service industry is impeccable. Her most recent success came as Controller of the highly acclaimed Ritz Restaurant in Newport Beach, California. For better than thirteen years Cheryl oversaw and maintained the highest of standards and quality, as exemplified by the Ritz experience. Additionally, Cheryl acted as Controller and was part owner of the Yankee Taverns located in Newport Beach and Dana Point, California, which were spin offs of the Ritz to address additional markets.

In 2002, Cheryl became a full time Partner in Pacific Whey, where she is instrumental in many areas of the day-to-day business of Pacific Whey including, staff management, accounting and operations.
